My Banana Nut Bran Muffins

1/4 C Butter or Shortening (you could probably use olive oil here but I have not tried that yet)

1/4 to 1/2 C sugar (I have tried this both way and they are both yummy)

1 egg (beaten)
1 C bran (I use all bran cereal, measure it in a cup and just cover it with milk so it gets soft)
1/4 milk (just enough to cover cereal above)
1 1/2 C mashed banana

1 1/2 C flour

2 teaspoons baking powder

1/2 teaspoon salt (optional)

1/2 teaspoon baking soda
1 teaspoon vanilla
1/2 to 1 C chopped nuts (I use walnuts probably closer to a cup)

Preheat oven to 350 degrees Fahrenheit

Cream butter and sugar add egg mix thoroughly.

Add milk soaked bran, mix well.

Sift flour, soda, baking powder and salt together.

Add alternately with mashed banana

See, mashed banana. :)

Add vanilla and nuts and mix well.

Fill greased muffin tins and bake at 350 degree Fahrenheit for about 25-30 minutes, until golden brow

Mmmmmmm yum, let them cool a bit then eat them up!
